Jackfruit Kimchi Tacos

Jackfruit is DDDelicious!
I made some Jackfruit Kimchi Tacos that fully slapped!
The texture is similar to chicken or pulled pork. It is nutritious and easy to use in a ton of different ways.
Here are the ingredients for jackfruit tacos:
- 1 can Jackfruit (I use the native young organic brand 14oz can)
- 1 can black beans
- 1 cup chopped spinach
- 1 cup kimchi (I like the bubbies brand)
- 1 package corn tortillas (I like the brand Mi Rancho)
- 2-3 TBS Coconut Aminos
- 1-2 TBS chili powder
- 1-2 TBS oregano
- 1-2 TBS garlic powder
- Salt and pepper

Heat the black beans up and add desired seasonings. I usually add a bit of oregano, garlic powder and salt and pepper.

Pour the water out of the jackfruit can and place the pieces of fruit in a sauté pan on medium heat. Add the coconut aminos, chili powder and oregano. Break the pieces of fruit up in the pan and stir them in the sauce and seasonings you just added.
Let that mixture cook while you blend the black beans to make a spreadable dip.
Blend the black beans up in a food processor or blender. I like to add a bit of coconut aminos to the beans to help them blend.
Chop the 1 cup of spinach.
Heat up the corn tortillas in a pan on medium heat.

Put it all together!
Spread some of the black bean mixture onto a tortilla, place a few pieces of jackfruit on top of that followed with a mini handful of spinach and about a tablespoon of kimchi.

Jackfruit can be seasoned in so many ways! I’m stoked to play more with this food.
